Saying goodbye to our little nook of the last 4 years this week! Our place was cute but TINY. We’re renting a new place just 10 minutes away, so no big changes, just a bit more space! 🏘 The best part about moving? Cleaning out & donating all that you no longer need! 🗑 Onward & upward.

Oven roasted sweet potatoes = One of my personal favorite sources of Vitamin A 🍠 Yes it’s great for glowing skin, but there are so many bodily functions it supports:

I’m not a big salad eater. Usually I prefer something like oven roasted veggies, but sometimes the craving hits hard! My husband baked some homemade chicken tenders in the oven, & I couldn’t help but steal a couple & add them to my greens & veggies 🥬🍅 All was topped with @primalkitchenfoods Honey Mustard dressing (a new favorite!).

Happy Monday! As I prepared for my dentist appointment this morning, I was thinking a lot about sugar. There are so many ways to satisfy that sweet tooth without any added sweeteners. One of my recent favorites has been “PB&J” oats for breakfast...The “PB” actually being @sunbutter & the “J” being mixed berries!

Looking for tasty plant based sources of iron? Chickpeas & lentils! I continue loving the occasional swap of my traditional pasta for @tolerantfoods chickpea or lentil pasta. Each serving has between 25-35% of your daily iron needs & is loaded with fiber & protein 💪

Happy Monday all! I hope everyone has been having a great first week of spring. With all of this beautiful weather, I’m reminiscing about outdoor adventures. Hopefully I’ll get back to the Grand Tetons one day ⛰ Photo circa 2014
