My Favorite Frozen Produce

I’m a huge fan of frozen fruits and veggies. The biggest reason?  No food waste!  They’re available for use in your freezer whenever you’re in need, and there’s no concern about them spoiling.  (I don’t know about you, but sometimes my eyes can be bigger than my stomach when it comes to fresh produce!)

I shared the below slides on my Instagram illustrating my favorite frozen produce to keep in the freezer whenever my day is in need of a little extra color.  These are, of course, not the only 6 items I buy, but they are the staples that I find to be the most versatile, flavorful, and easily accessible!

Some extra good news?  Frozen produce is nutritionally very similar to fresh!  That’s because it’s frozen right at the peak of freshness!

One last frozen produce tip: Stock your freezer with a handful of options before you travel! That way, when you return home, you have some colorful choices waiting for you (without the concern of them going bad while you’re away).

Peanut Butter Blueberry Banana Smoothie

If you’re a fan of smoothies with a milkshake-like consistency, this Peanut Butter Blueberry Banana Smoothie is for you!  It’s ridiculously thick, has no added sugar, and is made with just 4 basic ingredients!

Whether you’re enjoying it for breakfast at home or on the go, as post-workout fuel, or as a mid-afternoon snack, this smoothie is super satisfying and refreshing! It’s packed with protein, several servings of colorful fruit, fiber, and more. The greek yogurt and peanut butter make it super creamy. You’ll love it on a warm spring or summer day!

My personal favorite methods to freeze these fruits:

  • Bananas: Peel and dice them while they’re fresh and on the riper side, then store them in an airtight container in the freezer
  • Blueberries: Wash them while they’re fresh, dry them off, then store them in an airtight container in the freezer

Small glass food storage containers are my preference over ziplock bags as they’re more eco-friendly!

Servings: 1

Ingredients:

  • 2 Small Frozen Bananas
  • Approx. 2 Cups Frozen Blueberries
  • 1/2 Cup Plain Nonfat Greek Yogurt
  • 1/2 Cup Cold Water
  • 3 Tablespoons Peanut Butter

Directions:

Blend together all of the ingredients except the peanut butter in your blender of choice

Add in the peanut butter and blend again

Banana Cherry Smoothie

Thick and creamy like a milkshake, this Banana Cherry Smoothie is super satisfying and refreshing at any time of day!  It has the perfect amount of sweetness from the banana and apple juice, the perfect amount of creaminess from the Sunbutter and greek yogurt, AND the perfect amount of rich flavor from the dark cherries.  It only takes a few minutes to throw everything together!

Cherries are such an underrated frozen fruit to have on hand, but happen to be one of my personal favorites! They have such a deep flavor that holds up wonderfully when frozen. If you have any leftovers after this smoothie, add them into a bowl of hot or overnight oats, or into a yogurt bowl! (You can check out my article on frozen produce here.)

Servings: 1

Ingredients:

  • 1 Frozen Banana
  • 1 Serving Frozen Dark Cherries
  • 1/2 Cup Apple Juice
  • 1/2 Cup Plain Greek Yogurt (I used nonfat)
  • 2 Tbsp Sunbutter

Directions:

Blend all the ingredients except the Sunbutter in your blender of choice

Add the Sunbutter and blend again

Serve and enjoy!

Sourdough Banana French Toast

This Sourdough Banana French Toast was made with my Dairy-Free French Toast method!**  It’s such a simple and satisfying breakfast, and the quantities are easily multiplied if you’re feeding a group.

  • I’m such a big fan of using Saigon cinnamon, especially in French Toast! It adds the perfect touch of sweetness, and the flavor goes a long way! It’s been my go-to cinnamon variety for years.
  • Dark maple syrup has become another essential in our kitchen. Compared to lighter varieties, the maple taste shines through so much more. I highly recommend trying it out for meals like french toast!

**Because there is less liquid involved without the use of milk, the egginess is more prominent – but this creates a heartiness that’s perfectly balanced with the sweetness of the syrup and fruit on top!

Servings: 1

Ingredients:

  • 2 Slices Sourdough Bread
  • 2 Eggs
  • A Generous Sprinkle Of Saigon Cinnamon
  • 1 Sliced Banana
  • Dark Maple Syrup

Directions:

Warm up a small nonstick pan on medium heat

Scramble the eggs in a bowl

Add the saigon cinnamon and scramble again

Coat slice 1 of the bread in the egg mixture and cook it evenly on each side

Repeat with slice 2

Top with banana slices and maple syrup

Strawberry Banana Peanut Butter Smoothie

When it comes to super thick smoothies, you can’t go wrong with frozen fruit and lots of peanut butter!  This Strawberry Banana Peanut Butter Smoothie is tasty, filling, and oh-so easy!

Servings: 1

Ingredients:

1 Serving Frozen Strawberries (approx. 1 cup)

1/3 Cup Plain Nonfat Greek Yogurt

1/4 Cup Peanut Butter

1/2 Cup Cold Water

1 Small Banana

A Pinch Of Saigon Cinnamon 

Directions:

Blend together all but the cinnamon, add the cinnamon, and blend again

Serve and enjoy!

Banana Peach Sunbutter Smoothie

Reminiscent of a classic banana and peanut butter combo, this Banana Peach Sunbutter Smoothie is thick and creamy like a milkshake!  The addition of the peaches gives it a bit of extra sweetness and bulk but does not compromise the flavor at all.  The sweetness of the fruit balances perfectly with the “nutty” flavor of the Sunbutter in this super filling, nutrient-dense, quick and easy meal.

Servings: 1

Ingredients:

2 Frozen Bananas

1/3 Cup Plain Greek Yogurt (I used nonfat)

4 Tablespoons Sunbutter

2/3 Cup Cold Water

1 Serving Frozen Peaches (approx. 1 cup)

Optional: Honey or sweetener of choice if added sweetness is desired

Directions:

Add the bananas, yogurt, Sunbutter, and water into a blender and blend until smooth

Add in the peaches and blend again until smooth and evenly combined

Taste test, and if you prefer additional sweetness add honey/sweetener to taste and reblend (I personally prefer it less sweet and think it tastes delish as is.)

Serve and enjoy!

Chocolate Chip Banana Protein Oats

If somehow you’ve never enjoyed oats before, these Chocolate Chip Banana Protein Oats will convert you after one bite! They’re the perfect combination of dessert-y yet nutrient-dense. They’re also thick and creamy, have loads of added texture from the toppings, and can be whipped up in under 5 minutes!

Servings: 1

Ingredients:

1/2 Cup Quick Oats

+ Around 1 cup water for the oats

1 Packet NibMor Hot Cocoa

1/2 Cup Plain Greek Yogurt (I used nonfat)

1 Banana

1 Tablespoon Hemp Hearts

Around 2 Tablespoons Dark Chocolate Chips

Directions:

Cook up the oats with water (I use the microwave)

Stir in the hot cocoa packet

Stir in the yogurt until creamy and evenly combined

Slice up the banana and add it on top along with the hemp hearts and chocolate chips

Fruit & Chocolate Ice Cream Smoothie

Falling in between a lighter milkshake and a decadent smoothie, this sweet treat only requires 4 ingredients and makes for such a satisfying snack on a hot summer day!  It’s thick and creamy while frozen and icy at the same time, all while packing a nutritional punch with lots of vitamins, protein, and fiber. (For additional creaminess, feel free to substitute a higher fat greek yogurt if that’s your preference!)

Servings: 1

Ingredients:

1 Cup (5 oz) Frozen Strawberries

1 Frozen Banana

1/2 Cup Nonfat Plain Greek Yogurt

1/2 Cup Cold Water

1 Packet Nibmor Traditional Hot Cocoa (dry)

Directions:

Add all of the ingredients other than the cocoa into the blender and blend until smooth

Add in the cocoa and blend again until well mixed

Serve and enjoy!

Peanut Butter Banana Blueberry Smoothie

This fruity peanut butter combination is perfect on a hot summer day as a snack, light meal, or post-workout recovery treat!  It’s nice and creamy as well as high in protein, fiber, and lots of colorful fruit.  Nutritious and delicious!

Servings: 1

Ingredients:

A Couple Of Frozen Bananas

4 Tbsp Betty Lou’s Inc. Powdered Peanut Butter

1/3 Cup Whole Milk Plain Greek Yogurt

2/3 Cup Water

A Pinch Of Saigon Cinnamon

1/3 Cup Frozen Blueberries

Directions:

Blend all of the ingredients other than the blueberries together in a blender

Once smooth, blend in the blueberries as well

This smoothie provides such an energy boost!  Whether you’re looking to fuel a workout or simply jumpstart your day, it’s sweet, filling, packed with fruit, and so easy to whip up!

3 Oz Fresh Raspberries

1/2 Cup Whole Milk Plain Greek Yogurt

2 Frozen Bananas (sliced before freezing to ease blending)

1 Packet Nibmor Traditional Hot Cocoa (dry)

1/2 Cup Water
