Oven Roasted Sweet Potato Circles

These Oven Roasted Sweet Potato Circles are so basic, so easy, and the perfect nutritious and delicious side dish to have on hand for dinner.  They’re also a Thanksgiving classic at our house!

It just so happens that these potatoes are vegan, dairy-free, gluten-free, and nut-free, so they really are a crowd-pleaser!


This recipe makes as many potatoes as you need! Simply toss the potatoes in enough olive oil to coat them.

A great starting point is approximately 1 tablespoon of extra virgin olive oil : 1 potato, but this is adjustable based on the size of your potatoes!

Main Supplies Needed:

  • Ziplock Bags (optional)
  • Baking Sheets

Ingredients:

  • Sweet Potatoes
  • Extra Virgin Olive Oil
  • Sea Salt
  • Black Pepper

Directions:

Scrub and chop the sweet potatoes into medium-thin slices

Toss the slices with extra virgin olive oil | I do this in a ziplock bag

Toss with salt and pepper to taste

Place the coated and seasoned slices onto baking sheets

Bake at 425° for 45-50 minutes, flipping at the halfway point | Or until they’re crispy on the outside and soft on the inside
