Coffee Strawberry Shortcake Bites

These Coffee Strawberry Shortcake Bites are such a fun summer BBQ dessert!  No utensils required to eat them!

The deep coffee flavor in the shortcake and glaze combined with the freshness of the strawberries on top is a flavor match that will keep you coming back again and again for one more bite!

Main Supplies Needed:

  • A 9 Inch Square Pan
  • Parchment Paper
  • A Hand Mixer
  • A Cooling Rack
  • Toothpicks
  • A Baking Sheet

Servings: 36 Bites

Ingredients:

CAKE

  • 5 Tbsp Unsalted Butter, melted
  • 1/2 Cup Cane Sugar
  • 1 Egg, room temperature
  • 1.5 Cups All-Purpose Flour
  • 1.5 Tbsp Coffee Grounds
  • 2 Tsp Baking Powder
  • 1/4 Tsp Sea Salt
  • 1/2 Cup Milk, low fat

GLAZE

(If you like things sweeter, feel free to make a bit more!)

FRUIT

  • 18 Fresh Strawberries, halved

Directions:

CAKE

Preheat the oven to 350º and line a 9 inch square pan with parchment paper

Melt the butter in the microwave in a large, microwave-safe bowl, then stir in the sugar with a fork

Stir in the egg with a fork

In a second medium bowl, also with a fork, combine the flour, coffee grounds, baking powder, and sea salt

Pour the dry ingredients into the wet ingredients, and beat with a mixer on low (the mixture will be clumpy)

Add in the milk and beat again until fully smooth, but not overly mixed (the dough will be wet and slightly sticky)

Spread out the batter in the pan, stopping a little ways before the edges (it will expand) and bake for 20-21 minutes

The cake will be slightly bouncy yet dense

Pull the cake out of the pan using the parchment paper, and transfer it onto a cooling rack

While letting the cake fully cool, create the glaze 

GLAZE

Stir together the powdered sugar and brewed coffee and set aside

ASSEMBLY

Chop the cake into bite-sized pieces (about 36)

Wash and halve the strawberries

Top each cake bite with a berry, attaching them with a toothpick, placing them on a flat surface like a baking sheet

Drizzle with the glaze

Let the glaze solidify (30 minutes – 1 hour)

Serve and enjoy!

The End Of A Jar Of Sunbutter

1/2 Cup Rolled Oats

1 Tbsp Chia Powder

1/3 Cup Whole Milk Plain Greek Yogurt

1 Cup Freeze Dried Raspberries

1/2 Cup + 2 Tbsp Water

(Optional) Extra Sunbutter for serving (from your next jar!)

(Optional) Sweetener of choice such as a dash of honey

Directions:

Add the oats, chia powder, and greek yogurt into the jar

Stir with the water, making sure to incorporate any remaining Sunbutter coating the jar

Stir in the dried raspberries

Refrigerate covered for about 24 hours

Once ready to eat, enjoy topped with extra Sunbutter, fresh or additional freeze dried berries, and/or optional sweetener of choice

Berry Chocolate Protein Smoothie

This smoothie provides such an energy boost!  Whether you’re looking to fuel a workout or simply jumpstart your day, it’s sweet, filling, packed with fruit, and so easy to whip up!

Peanut Butter Berry Milkshake Smoothie

Peanut Butter Berry Milkshake Smoothie

I don’t know about you, but I like my smoothies to be super thick to the point that they’re basically ice cream!  Truly a milkshake consistency, this smoothie is high in protein and fiber, super filling as a post workout meal, and an all-around tasty way to get some more fruit into your day!

Ingredients:

1 Banana

2 Servings Frozen Strawberries

1 Serving Plain Greek Yogurt (I use nonfat)

1/2 Cup Oat Milk

3 Servings Powdered Peanut Butter – Around 6 Tablespoons Dry (I use Betty Lou’s Inc.)

Directions:

Blend in your blender of choice!  For the best consistency, first blend the banana, half of the frozen strawberries, the yogurt, and the oat milk.  Second, blend in your powdered peanut butter.  Finally, blend in the other half of the frozen strawberries.

Enjoy!
