Peanut Butter & Oat Energy Bites (With Chocolate Chips)


These 5-ingredient Peanut Butter & Oat Energy Bites (With Chocolate Chips) are such a simple, sweet, grab-and-go snack for busy days! They pack an energy punch, are made with nutritious ingredients, and are so convenient to have on hand in the refrigerator. The sweet peanut butter and honey base is balanced with a hint of salt + chocolatey goodness from the chocolate chips. They also happen to be both gluten free and dairy free!

Combine the peanut butter and honey, stir in the oats and salt, fold in the chocolate chips, and roll them into balls – Voilà; A batch of healthy snacks at the ready!

RECIPE NOTES:
Room Temperature Ingredients: All ingredients for this recipe should be at room temperature, so if you’re someone who keeps their peanut butter in the refrigerator, remember to let it warm to room temperature before beginning!
Letting The Mixture Sit: It does require a tad extra patience, but letting the mixture sit is important for letting the oats soften enough to be an enjoyable texture. See Directions below!
Storage: Store these bites in an airtight container in the refrigerator. This is mostly because it will keep the natural peanut butter from separating and help the bites keep their shape overall. Bring bites to room temperature shortly before enjoying any leftovers for the best texture, or enjoy cold if you prefer. I honestly like them both in their soft room temperature form as well as their firmer refrigerated form! Different experiences, but equally delicious! These bites last for quite a long time; I’ve eaten them out of the refrigerator over 2 weeks after making them!

INGREDIENT NOTES:
Creamy Natural Peanut Butter: Creamy natural peanut butter has the best texture for these bites. You’ll want to look for one where the only ingredients are peanuts and salt. It’s more fluid at room temperature, versus a “no-stir” variety that will be a little too stiff to work with! Personally, I HIGHLY recommend this dark roasted peanut butter because the flavor is really incredible. I have not tested this recipe with alternative nut/seed butters since the peanut butter was such a key part of the overall flavor and texture!
Manuka Honey: I love using this Manuka honey for this recipe because of the super flavorful taste and thick texture! Manuka honey has a lower water content than traditional honey, which creates more of a dough-like consistency when mixed with the peanut butter. Regular honey can work too, but because of the higher water content, you’ll get a slightly more wet consistency. (Choosing one with a thicker viscosity and chilling the bites helps a lot!) Because honey taste profiles are all extremely different, choose one that you love the flavor of!
Gluten Free Old Fashioned Rolled Oats: I personally used these gluten free old fashioned rolled oats because I love their texture! Regular old fashioned rolled oats should work equally well, but I would not recommend quick cooking oats.
Salt: I used finely ground sea salt. It’s just a dash, but super important for balancing out all the sweetness from the honey.
Semi-Sweet Chocolate Chips: For these bites I love classic semi-sweet chocolate chips! (I used a variety that was 54% cacao.)

Kitchen Equipment:
- 1 Large Bowl
Servings: 12 2-inch Bites
Ingredients:
- 1 Cup Creamy Natural Peanut Butter, (I used Dark Roasted), room temperature
- 1/3 Cup Manuka Honey
- 1/2 Cup + 3 Tablespoons Gluten Free Old Fashioned Rolled Oats
- 1/8 Teaspoon Salt, I used finely ground sea salt
- 1/2 Cup Semi-Sweet Chocolate Chips
Directions:
In a large bowl, add the peanut butter (after giving the jar a good stir), then the honey, then stir together until doughy


Add in the 1/2 Cup of oats, and knead in with a spoon until well combined


Add in the remaining 3 Tbsp of oats along with the salt, and repeat


Let the mixture rest for approximately 1 hour for the oats to soften (giving it a few stirs throughout)
Re-mix, stir in the chocolate chips, then let rest for another 15 minutes


Form into 12 2-inch balls, and enjoy!
