Easy Chocolate Chunk Banana Bread

Easy Chocolate Chunk Banana Bread

This Easy Chocolate Chunk Banana Bread pairs perfectly with a morning cup of coffee when you’re craving something sweet for breakfast!  (Some days, a second bite in the afternoon or evening is a must as well!)  The ingredients can all be mixed together in just a few minutes; it’s incredibly quick and simple to make.

Ovens will vary, so while the approximate baking time hovers around 50 minutes, be sure to begin testing it with a toothpick a couple of minutes before this.  If it needs more time, continue testing with a toothpick every couple of minutes until it comes out clean!

Kitchen Equipment:

  • A Loaf Pan (approx. 10” x 5”)
  • 1 Large + 1 Medium Bowl
  • Toothpicks

Servings: 1 Loaf / 8 Slices

Ingredients:

  • 3 Large Bananas, ripe
  • 1/2 Cup (1 Stick) Unsalted Butter, melted and briefly cooled
  • 1/4 Cup Light Brown Sugar, packed
  • 1/4 Cup + 1 Tbsp Cane Sugar
  • 1 Egg, room temperature, beaten
  • 1 Tsp Maple Syrup
  • 1.5 Cups All-Purpose Flour
  • 1 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1 Cup Semi-Sweet Chocolate Chunks (plus extra to sprinkle on top – I used 1 oz extra)

Directions:

Preheat the oven to 350º

Line a loaf pan with parchment paper and set it aside

In a large bowl, thoroughly mash the bananas

Melt the butter and let it cool for just a couple of minutes

Add the melted butter to the mashed bananas and stir until combined

Stir in the sugars

Then, stir in the egg and maple syrup

In a medium bowl, whisk together the flour, baking soda, and salt

Add the dry ingredients into the wet ingredients, and stir until combined

Stir in the chocolate chunks

Pour the batter into the lined loaf pan

Top with extra chocolate chunks

Bake until a toothpick comes out clean ~ Approximately 50 minutes

Let the bread cool in the pan on a cooling rack

After about 45 minutes, remove the bread from the pan to finish cooling

After fully cooling, slice, and enjoy!

[Bread can be stored covered/airtight at room temperature.]
