Maple Apple Baked Oatmeal

This soft and spiced Maple Apple Baked Oatmeal is a sweet and cozy start to the day on chilly mornings!  Served with a drizzle of maple syrup, and scattered with flavorful apple pieces, this baked oatmeal is such a delicious meal prep choice that’s packed with nutritious ingredients.

Seasonally, this breakfast is well-suited for autumn.  However, I truly love these warming flavors any time the weather is cold and dreary regardless of the season…Maybe you do too!  It was unusually cool, rainy, and dark the week that I made this oatmeal, despite spring days being just around the corner.

If you have apples waiting to be used up, which I often do, that’s the perfect excuse to prepare this easy and comforting breakfast for yourself or your family.  Enjoy it on its own or with a hot cup of coffee on the side.

RECIPE NOTES:

Room Temperature Ingredients: For any ingredients that are being stored in your refrigerator, place them on the counter to come to room temperature before baking!  While the Greek yogurt and eggs feel obvious, I take everything currently being chilled out: Chia seeds, maple syrup, oat milk, and even the apple! 🙂

Pan: I used a 9 x 9 metal pan for this recipe.  (Glass, metal, and ceramic pans all conduct heat differently!)

Parchment Paper: Parchment paper is a must for both easy cleanup as well as preventing the oatmeal from sticking!  I love using clips to hold it in place while I add my oatmeal mixture into the pan (see photo below)Remove any clips before placing the pan in the oven of course!

Storage & Leftovers: This baked oatmeal tastes incredible when it’s warm from the oven!  However, it also reheats perfectly.  Simply slice the cooled oatmeal into your preferred serving sizes, and store the slices in an airtight container in the refrigerator.  I like to add a layer of parchment paper in between the slices to keep them from sticking together.  Once ready to eat, simply rewarm in the microwave for approximately 30 seconds, then add your maple syrup to taste!

Dry ingredients

Old Fashioned Rolled Oats: I personally used these gluten free old fashioned rolled oats because I love their texture!

Chia Seeds: Chia seeds help to bind the ingredients together, but also add a nice boost of healthy omega 3s to this breakfast!  (I used black chia seeds.)

Ground Saigon Cinnamon: Cinnamon is always a great background spice for anything made with apple and maple!  I strongly recommend using Saigon cinnamon for the sweetest flavor!

Ground Nutmeg & Cloves: These spices are super warming and fragrant, and complement the apple, maple, and cinnamon beautifully.  Always remember to check the best-by dates on your spices too (or give them a sniff) to check on their potency!

Baking Powder: A little bit of leavener is needed to help this oatmeal get its final fluffy consistency!

Salt: Salt is a must for flavor balance and texture!  I used finely ground sea salt.

Wet ingredients

Dark Maple Syrup: Dark maple syrup adds extra maple flavor, so I highly recommend getting your hands on some!

Plain Nonfat Greek Yogurt: This was the variety of Greek yogurt that I had on hand, but I would imagine that other plain Greek yogurts would work just as well.  This ingredient provides a bit of extra moisture for the proper texture.

Eggs: Be sure to let your eggs come to room temperature first!  Eggs are essential for moisture, structure, and binding.

Oat Milk: The subtly sweet and oaty flavor of oat milk works really nicely with the flavor combinations in this recipe!  The taste and texture of this one is definitely a favorite.  I have not tested any other dairy or non-dairy milks, but I will update this page in the future if I do.  Feel free to experiment! 

Vanilla Extract: Vanilla is a must to enhance all of the flavors!

Unsalted Butter: A bit of butter gives this baked oatmeal a nice, subtly rich flavor.  Unsalted butter lets you control the amount of salt in the recipe!

The apple

Finely Chopped Apple: I used an Envy apple for this recipe because I love the warm tasting notes.  Feel free to try out whichever apples you love!  I would guess that varieties like Honeycrisp, Cosmic Crisp, or anything similar would be delicious too.  Leave the skin on for the best flavor!

To serve

Dark Maple Syrup + Finely Chopped Apple Garnish: This oatmeal is best enjoyed with a drizzle of dark maple syrup to taste, and an optional garnish of additional finely chopped apple if you like added crunch or freshness!  The oatmeal is only subtly sweet on its own, and therefore needs the additional sweetness and flavor of the added maple syrup!

  • Bowls (1 Large + 1 Small)
  • Cooling Rack

Servings: Approx. 8

Ingredients:

  • 2 3/4 Cups Old Fashioned Rolled Oats, I used gluten free
  • 1 Tablespoon Chia Seeds, room temperature
  • 1 Teaspoon Ground Saigon Cinnamon
  • 1/4 Teaspoon Ground Nutmeg
  • 1/4 Teaspoon Ground Cloves
  • 1 Teaspoon Baking Powder
  • 1/4 Teaspoon Salt, I used finely ground sea salt
  • 6 Tablespoons Dark Maple Syrup, room temperature
  • 6 Tablespoons Plain Nonfat Greek Yogurt, room temperature 
  • 2 Eggs, room temperature
  • 1 1/4 Cups Oat Milk, room temperature
  • 2 Teaspoons Vanilla Extract
  • 1/4 Cup Unsalted Butter, melted and cooled
  • 1 Cup Finely Chopped Apple, I used Envy, room temperature

TO SERVE

Directions:

PREP

First, bring any refrigerated ingredients to room temperature

Line a 9 x 9 metal baking pan with parchment paper, then set it aside

BAKE

In a large bowl, stir together the oats, chia seeds, spices, baking powder, and salt

In a second, small, microwave-safe bowl, melt the butter in the microwave

Let the butter cool for approximately 15 minutes, stirring occasionally to keep it fluid

Next, add the maple syrup, Greek yogurt, eggs, oat milk, vanilla extract, and melted/cooled butter into the dry ingredients, and stir until well combined

Let the combined mixture sit for approximately 30 minutes, to soften, stirring occasionally (Preheat the oven to 375º during this time)

Stir in the chopped apple pieces

Pour the mixture into the prepared baking pan, and smooth it out evenly with a spoon

Bake for 28-30 minutes, or until the center looks set with subtle cracks throughout

Place the pan on a cooling rack, and let it cool in the pan for 10-15 minutes before enjoying it warm from the oven (Or, let it fully cool, then store slices in an airtight container in the refrigerator)

Serve with maple syrup to taste, and an optional sprinkle of finely chopped apple to garnish
