Banana Peach Sunbutter Smoothie

Reminiscent of a classic banana and peanut butter combo, this Banana Peach Sunbutter Smoothie is thick and creamy like a milkshake!  The addition of the peaches gives it a bit of extra sweetness and bulk but does not compromise the flavor at all.  The sweetness of the fruit balances perfectly with the “nutty” flavor of the Sunbutter in this super filling, nutrient-dense, quick and easy meal.

Servings: 1

Ingredients:

2 Frozen Bananas

1/3 Cup Plain Greek Yogurt (I used nonfat)

4 Tablespoons Sunbutter

2/3 Cup Cold Water

1 Serving Frozen Peaches (approx. 1 cup)

Optional: Honey or sweetener of choice if added sweetness is desired

Directions:

Add the bananas, yogurt, Sunbutter, and water into a blender and blend until smooth

Add in the peaches and blend again until smooth and evenly combined

Taste test, and if you prefer additional sweetness add honey/sweetener to taste and reblend (I personally prefer it less sweet and think it tastes delish as is.)

Serve and enjoy!

Protein “PB & J” Smoothie

This 4 ingredient smoothie is one of my go-tos for that post-workout time of day! I love how filling, creamy, and satisfying it is, all while packing a big nutrition punch! I’ve tried lots of variations including using different yogurt varieties as well as adding in extra Sunbutter when I’m looking for something more filling, so do a taste test and adjust the ratios to your preferences!

Servings: 1

Ingredients:

2 Cups Frozen Strawberries

3/4 – 1 Cup Plain Greek Yogurt (nonfat or full fat both work)

1/2 Cup Apple Juice

2 Tablespoons Sunbutter (or more if you want more of the “nut butter” taste!)

Directions:

Blend half of the frozen strawberries, the yogurt, and the apple juice in a blender

Once blended, add in the Sunbutter and second half of the strawberries and blend again

Taste test, adjust to taste, and enjoy!

Berries & Cream Smoothie

If you’re a fan of traditional Berries and Cream this smoothie is for you!

Ingredients:

1 3/4 Cup Frozen Strawberries

1/3 Cup Whole Milk Greek Yogurt

3 Tbsp Sunbutter

1/2 Cup Water

1/2 Cup Frozen Blueberries

Optional – A dash of a sweetener of choice (such as agave syrup or honey)

Sunbutter Berry Overnight Oats

Don’t throw out your nearly empty Sunbutter, Peanut Butter, or Nut Butter jars!  They make the perfect vehicle for overnight oats to go!  This breakfast is perfect for a grab-and-go meal when you’re traveling or heading off to work or school.

It doesn’t get any easier: Simply add your ingredients into the jar, combine, refrigerate, and serve.  It’s creamy, filling, not overly sweet, and filled with nutrient-dense ingredients!

Ingredients:

The End Of A Jar Of Sunbutter

1/2 Cup Rolled Oats

1 Tbsp Chia Powder

1/3 Cup Whole Milk Plain Greek Yogurt

1 Cup Freeze Dried Raspberries

1/2 Cup + 2 Tbsp Water

(Optional) Extra Sunbutter for serving (from your next jar!)

(Optional) Sweetener of choice such as a dash of honey

Directions:

Add the oats, chia powder, and greek yogurt into the jar

Stir with the water, making sure to incorporate any remaining Sunbutter coating the jar

Stir in the dried raspberries

Refrigerate covered for about 24 hours

Once ready to eat, enjoy topped with extra Sunbutter, fresh or additional freeze dried berries, and/or optional sweetener of choice

Easy Vegan Fruit & Seed Smoothie

This 4-ingredient snack couldn’t be easier to make!  Keeping a stash of a variety of frozen fruit in the freezer is so helpful when creating smoothies on a whim.  I love combining handfuls of it with some sunflower seed butter and water which beautifully blends into a sweet, creamy, and refreshing snack that just so happens to be vegan and gluten free!

This is a snack-size portion, but if you were looking for more of a meal you could easily double the measurements.  I love drinking this as a side with a sandwich at lunch, or as a mid-afternoon bite.  It’s one of my favorite ways to add a couple extra servings of fruit into my day!

Ingredients:

1 Large Frozen Banana (sliced before freezing to ease blending)

12 Frozen Dark Cherries

2 Large Frozen Strawberries

2 Tbsp Sunbutter

2/3 Cup Water

Berry & Peach Sunbutter Smoothie

This high protein smoothie is nearly a milkshake it’s so thick and creamy, but that’s my preference when it’s functioning as a meal!  It’s perfect as a filling breakfast, post-workout recovery fuel, or a mid-afternoon snack.  If you’ve ever loved the addition of peanut butter in your smoothies, this offers a very similar flavor profile in the way that it compliments the fruit and the yogurt.  The added bonuses are that it makes it more allergy friendly as well as nutritionally diverse if you’re looking to mix up your ingredients!

Ingredients:

1 Serving Frozen Strawberries (approx. 1 cup)

1 Serving Plain Greek Yogurt (I used nonfat)

1/2 Cup Apple Juice

2 Tbsp Sunbutter

1 Serving Frozen Peaches (approx. 1 cup)

Directions:

Add the strawberries, greek yogurt, and apple juice to your blender and blend

Add in the Sunbutter and blend again

Add in the frozen peaches and blend a third time until smooth and evenly combined

Manuka Sunbutter Ice Cream

This Manuka Sunbutter Ice Cream has only 5 ingredients, is dairy free, and doesn’t require an ice cream maker! If you’ve ever been a fan of the peanut butter and honey combo, this one is for you!

Ingredients:

27 Fluid Ounces Unsweetened Coconut Milk

2/3 Cup Sunbutter

1/2 Cup Manuka Honey (I used Taylor Pass Honey Co)

3 Teaspoons Vanilla Extract

1/4 Teaspoon Sea Salt

Directions:

Place an empty freezer-safe pan into the freezer to chill for a couple of hours before preparation

Add all of the ingredients, starting with the coconut milk, into a large food processor

Blend on a low setting for about 3 minutes

Pour the mixture into the chilled pan and return it uncovered to the freezer for 45 min

Once the edges begin to freeze, remove it from the freezer and whisk until smooth

Return it to the freezer for 50 min, remove, and whisk again

Return it to the freezer for another 50 min, remove, and beat with a hand mixer on a low-medium setting

Return it to the freezer for a final 50 min, remove, and beat again with the hand mixer

It can be immediately served as soft serve, or be left sealed to harden further in the freezer to reach a firmer texture if desired

Serve as is, with drizzles of Sunbutter and Manuka, or with your favorite toppings

Sunflower Pumpkin Spice Oats

It’s the perfect breakfast on chilly autumn mornings! They’re creamy, vegan, and gluten free. They’re also nutrient dense with lots of Iron, Vitamin A, and Vitamin E.

Ingredients:

1/2 Cup Quick Oats with Water

1/4 Cup Canned Pumpkin Purée

Dashes of Saigon Cinnamon, Allspice, and Nutmeg to taste

Sweetener of Choice (like maple syrup)

2 Tbsp Sunbutter

Directions:

Cook up the oats with water

Stir in the pumpkin, then spices, then sweetener, then Sunbutter

Ingredients:

1 Cup Sunbutter

1/3 Cup Manuka Honey

2 Tsps Vanilla Extract

1 Cup Old Fashioned Rolled Oats

1/4 Cup Salted Pumpkin Seeds

1/3 Cup Hemp Hearts

Directions:

Stir together the sunflower butter, manuka honey, and vanilla extract in a large bowl.

Stir in all of your remaining dry ingredients.

Roll into balls and enjoy!
